MIDNIGHT CAKE WITH COCKTAIL CHERRIES

For my first recipe I decided to do a favourite of mine that I learned from my grandmother and slightly updated it through the years. A warning for those on diet, do have in mind that this one is quite caloric! But oh, how it melts in the mouth. I love baking this very late in the evening, or early in the morning, depends on how you think about it. So here are the ingredients:

INGREDIENTS:

1 cup oil
1 sup sugar
1 1/2 cup flour
1/2 cup yogurt
2 eggs
1 jar of cocktail cherries
1 teaspoon baking soda
1 tablespoon cocoa

PREPARATION:
First you mix in a bowl the flour and the baking soda. Then you add the yogurt, the eggs, the oil and the sugar. You mix everything with a mixer or with a spoon, either will work. Then you divide the mixture in two. You pour the first part into a baking tray. You put the cocktail cherries on top. Then you add cocoa to the mixture that is left and mix it up very well. You add a little bit of the juice from the jar of cocktail cherries. You pour that on top of the cocoaless mixture and the cherries.  Now comes the special part: with a spoon you need to mix a little bit the cocoa mixture and the cocoaless mixture, but without mixing them completely. You do it in the same way they do the coffee and foam patterns. 

All that is left to do is preheat the oven on 200 C fan. Then bake the cake for 20-30 minutes.
